I start most of my days off with a large, large fruit and green vegetable smoothie. The idea of adding greens to my smoothies came from the work of Victoria Boutenko in her book Green For Life. For more information on her work, go to www.rawfamily.com
Green smoothies are very nutritious. The ratio that is optimal for human consumption is about 60% - ripe organic fruit mixed with about 40% - organic green vegetables according to the Boutenko family. The fruit and greens in my smoothie will change all the time depending on what is fresh and in season. Some of the greens are hard to find. Victoria mentions lambs quarters, stinging nettles and purslane. I often will substitute those for Kale, Spinach or Swiss Chard. The taste is amazing. They make look green, but they taste sweet.
Chewing is overrated :) Blending foods and making smoothies has been an easy, practical way for me to get in my 9-13 servings of fruits and vegetables each day. Plus, blending food takes out the chewing (which most of us don’t do too well) and puts less burden on your digestive system. I strongly suggest trying some of these smoothies. You will be amazed at how good they can be.
